Single-Serving Carnivore Cheesecake

4 oz cream cheese at room temp

1 teaspoon of sour cream

1/2 teaspoon vanilla extract (optional)

3 teaspoons of half and half

1 small egg at room temp


  • preheat the oven to 300F

  • grease 4-inch ramekin with butter

  • in a small bowl, mix together all ingredients but the egg til smooth

  • beat in the egg til just combined, do not overmix

  • pour into the ramekin and smooth out the mixture, tapping the ramekin against the counter to remove any air bubbles

  • place the ramekin in a larger dish and fill the outside dish with hot water until it reaches halfway up the sides of the ramekin

  • bake for 35-40 minutes until set

  • cool in the fridge for at least 2 hours before serving
