no-carb carnivore crostini

Ingredients

2 eggs

1/8 t cream of tartar

1 oz / 25g cream cheese

salt to taste

Instructions

  1. separate the egg whites and yolks
  2. add cream of tartar to the egg whites and whip to stiff peaks
  3. mix softened cream cheese and salt to taste to the egg yolks in a separate bowl
  4. gently fold the egg whites into the egg yolks until just combined
  5. drop cracker-sized dollops of batter on a lined baking sheet
  6. bake in a 300F / 150C oven for 7-10 minutes
  7. leave the crackers out to “dry out” overnight
  8. before assembling the crostini, re-bake the crackers under the broiler at low heat for 2-3 minutes.
