Mummeat Balls


1/2 lb ground sausage

1/2 lb ground beef

Mozzarella pearls

1 cup shredded mozzarella

1 egg yolk


  • Mix together sausage and ground beef

  • Flatten 1 oz portions of meat mix and wrap around mozzarella pieces

  • In a frying pan over medium heat, fry meatballs til cooked through

  • Meanwhile, microwave the mozzarella for 30 seconds until melty

  • Let it cool for a moment before mixing in the egg yolk

  • Flatten the noodle mixture in between two sheets of parchment paper and let it dry out in the fridge until the parchment paper pulls cleanly away

  • Slice noodle sheet into fettuccine width slices

  • Wrap noodles around each meatball and serve
