crispy chicken thighs

Well-crisped chicken skin is an out-of-body taste experience. I cringe thinking back to all of the years I spent buying boneless, skinless, tasteless chicken breasts. If that is you, today is the day we end your flavorless legacy of sadness.

Crispy Oven-Baked Chicken Thighs

Ingredients

  • 1 lb of small to medium-sized chicken thighs
  • salt to taste

Instructions

  1. Preheat your oven to 400F
  2. Place the thighs in a single layer in an oven-safe baking dish
  3. Bake for 30-40 minutes (cooking time will vary based on the size of the thighs, I start checking the temperature at 30 minutes), until a meat thermometer reads 165F when inserted into the center of the thigh
  4. Once the internal temperature reaches 165F, turn the broiler to low and crack your oven
  5. Broil the chicken thighs for 5-7 minutes, turning the pan halfway through the cooking time
  6. Watch the thighs carefully starting at the 5 minute mark
  7. Remove from the oven and serve! I like to poor the juices from the pan into the bottom of the dish I am serving the thighs in to retain all that delicious, fatty flavor.
