1 egg yolk

100 mL / 1/2 c heavy cream

50 mL / 1/4 c heavy cream (for whipping)

pinch of cream of tartar

optional: vanilla extract, cocoa powder, protein powder


  1. heat all ingredients together in a saucepan until thickened (add flavorings as desired at the end)

  2. transfer to ramekins and refrigerated (ideally overnight)

  3. whip hwc with pinch of cream of tartar and top before serving
