Carnivore Ravioli Made with Carnivore Noodles


For noodles:

2 egg yolks

2 c mozzarella

1lb italian sausage

1/2 c ricotta

2 oz parmesan

salt to taste


For noodles:

  1. soften mozzarella in the microwave for 30 seconds

  2. let cool for a moment before mixing in egg yolks

  3. flatten noodles between two sheets of parchment paper using a rolling pin

  4. refrigerate overnight to "dry" noodles out

For ravioli:

  1. brown italian sausage in a frying pan over medium heat, drain excess fats

  2. mix with ricotta, parmesan, and salt to taste

  3. fill ravioli with mixture and seal edges with a fork

  4. heat ravioli in brown butter, beef broth, or alfredo sauce
