1 1/2 c / 350mL heavy whipping cream
1 T vanilla extract (optional)
2 egg yolks
1/2 T vanilla extract (optional)
2 cups / 475mL full fat plain greek yogurt
a pinch of salt
heat heavy whipping cream with 1 T vanilla and egg yolks in a saucepan until the cream just begins to simmer
while the cream is heating, mix an additional 1/2 T of vanilla with full fat plain greek yogurt
once the cream comes to a simmer, remove from the heat and add a pinch of salt.
allow the cream mixture to cool before sieving and mixing into the greek yogurt
freeze in an airtight container for at least 4 hours
